Avoid is an attribute that determines your chance to avoid a melee hit aimed at you, making the foe miss. You can see your ability to avoid hits in your 'score', right above alignment, for example You have a paltry ability for avoiding hits.

Aside from the +avoid equipment itself, dexterity has a positive effect in your avoiding ability, as well has the skill defence sense.
